Saffron.
I still remember the first time I had Jujeh Kabab at a family picnic in Tehran. The smell of grilled chicken, the smoky tomatoes on the side, and that unmistakable golden glow from saffron – it was unforgettable. That’s why I always say: without saffron, it’s not really Jujeh Kabab.
- 1 kg chicken breast or thighs (boneless, cut into cubes)
- 1 large onion, grated
- 3 tbsp plain yogurt
- 3 tbsp olive oil
- Juice of 2 lemons
- 1 tsp salt
- ½ tsp black pepper
- 1 tsp turmeric
- 1 generous pinch of AKU saffron threads (soaked in 3 tbsp warm water for 20 minutes) AKU Safranfäden (20 Min. in 3 EL warmem Wasser ziehen lassen)
For serving:
- Steamed Persian saffron rice (chelo) or flatbread
- Grilled tomatoes & peppers
- Fresh herbs (parsley, mint, basil)
Step-by-Step Recipe
Step 1 – Saffron infusion Take a pinch of AKU saffron, grind it gently between your fingers (or use a mortar), and let it soak in warm water. Within minutes, the water will turn golden and release that delicate aroma. This is the secret weapon of Persian cooking.
Step 2 – Marinade In a big bowl, mix yogurt, lemon juice, olive oil, grated onion, salt, pepper, turmeric, and the saffron infusion. Give it a good stir.
Step 3 – Marinate the chicken Add the chicken pieces. Massage the marinade into the chicken with your hands – yes, it’s messy, but it makes sure every piece is coated. Cover and refrigerate for at least 4 hours (overnight if you can). The longer, the better.
Step 4 – Skewer & grill Thread the chicken onto skewers. Grill over charcoal (the smoky flavor makes it authentic) or use a grill pan. Cook for about 12–15 minutes, turning occasionally. Brush with a little saffron water or melted butter during grilling – it keeps the chicken juicy and shiny.
Step 5 – Serve Serve hot with saffron rice, grilled tomatoes, and fresh herbs. Don’t forget to squeeze some extra lemon juice on top.
Jujeh Kabab is not just food – it’s part of Persian culture, something that brings people together. With AKU saffron, you get that golden color and aroma that makes the dish truly authentic.
So, next time you want to impress your family or friends, try this recipe. You’ll see how a simple chicken skewer can taste like pure luxury when saffron is involved.
